When the weather turns cold and gray out, that’s when you want to huddle inside, staying warm, and comfortable. And what could be more warming or full of comfort than a hot bowl of soup?

We wanted to share this quick and easy recipe for Giving Soup. It’s a perfect midweek meal, and was fun to make.

INGREDIENTS:

6 Cups Chicken Broth

14.5oz can of diced tomatoes with garlic and onion

12oz bag of sliced carrots (we used fresh, but you could substitute frozen)

12oz bag of green beans (we used fresh, but you could substitute frozen)

1 Cup of chicken, cooked and cut into bite size pieces

1 cup elbow pasta, precooked

1 Tbs. Italian Seasoning

1/2 cup shredded parmesan cheese

salt and pepper to taste.

This is a recipe that can be easily done with substitutions, or ingredients on hand. We used fresh carrots and green beans, but you could easily used frozen or canned versions.

To 6 cups of chicken broth, add one can of diced tomatoes. We used italian style tomatoes, which gave this soup extra flavor.

Make sure that the veggies are chopped into bite size pieces that will fit on a spoon. If using fresh or frozen, add them right after the tomatoes so that the soup can warm them through and soften the vegetables.

We happened to have leftover grilled chicken breasts from the night before. This was a perfect addition, and the grilled taste really added to the flavor of the soup. Next we added the Italian seasoning, cooked pasta, and salt and pepper to taste. Each serving was ladled into a bowl and topped with cheese.
